Meat Quality Probe

Miniprobes is developing a fibre-optic needle that can measure meat quality. This will allow meat processors to quickly identify high quality meat for sale as a premium product.

The key indicator of meat quality is the amount of intramuscular fat. These tiny, naturally-occurring cells of fat throughout the muscle improve juiciness and flavour in the meat. Our imaging needles are able to measure the amount of intramuscular fat in meat.

Miniprobes is working closely with Meat & Livestock Australia and The University of Adelaide to deliver this product to the Red Meat Industry.

We have validated the accuracy of this device, and have installed our first system at a commercial meat processing plant. We will be seeking AUS-MEAT accreditation in early 2026, and release the product for sale later in 2026.
